Cell Bikes do online custom fixies. Pista bikes in South Yarra stock a wide range of some of the above brands. There's been a few other on-line custom fixie places come and go in the past few years. Names elude me right now.....
Most of your inner city hipster suburb bike shops usually stock a good range. Also, BikeFO might be worth checking out
Weren't JellyBean Bikes at the Bike Trade Expo last year? They used to advertise in Ride On, and were recommended in the Dec 2010 - Jan 2011 issue
