I'd be throwing a set of these on her bike, rather than bodging a thread conversion that spreads her feet an extra couple of inches apart and puts unintended stresses on the crank.
Even if you need a new BB as well... basic Shimano BBs are so dirt cheap these days that it seems crazy to throw money at an expensive kludge like those adaptors.

I'd have to agree here. The weak point on most one-piece 'ashtabula' 1/2" pedal thread cranks is around the thread area, and with extra leverage I would be very wary of it cracking through / breaking off.
