I used to live on the extreme west coast. You could take a ride over there. There is some extreme riding over there. Most hostels will allow you to leave the bikes there for a few days if you don't want to take them.

Start training with the bike loaded with what you will be carrying on the ride. Find some good hills and practice riding up and down them. Don't train by riding flat out, but keep your speed down and save your energy to be able to ride all day.
