OK - some of this is stuff I've heard, part of it is my personal experience:
1. Dean at Bike Life in Auburn has a smaller range of bikes to purchase, but gave me a really good bike fit on the bike I bought from elsewhere. If you are looking for someone to fit your existing bike, please go and talk to Dean (ummm... unless that's like travelling from Albury or something!)
2. Bleve on these forums does bike fits for Mitcham Cycle Science (I think!) - I have no experience with bike fits from him, but have met him and spoken to him on many other topics and he seems to have good knowledge and a good attitude
3. Lots of people like Kennedys in Black Rock. There are two schools of thought here - the system he uses can work really really well, or totally and utterly attrociously - there appears to be no way to determine the outcome beforehand. I know of at least two women who have Kennedy bikes and are totally happy with them. He also has at least one female doing the bike fits with him.
4. Many people on here have had bike fits done by physios, rather than bike shops, I think OPSM is one - and of course Emma Colson would be ideal, but she is not available for about half the year as she is off competing.
