FWIW, I ride a flat bar road bike with SPD's and have set my saddle height so that my leg is fully extended while my heel is at pedal bottom of stroke. My seat is positioned flat so that my knee is directly over the pedal center in forward most position and handle bar height is few cm's lower than saddle.
I'd be grateful for any advice.
