Sram is 3 at a time as well. 3 sweeps from smallest cog to highest so they are all about the same in that regard. I'd say Sram is significantly faster at shifting down the cassette than Shimano though, primarily as the throw is so much shorter. And yes I have ridden a 6700 bike when on holidays late last year to compare to.
