Not really the weather for it today but Pie!
PiledHigher’s Beef, Stout and Mushroom Pie
0.5kg Mince (or chuck/rump steak diced)
3 Cloves garlic
2 Large Mushrooms
2 Small parsnips
2/3 Bottle of Stout (1/3 for the chef)
1 Cup Beef Stock
1 tsp sugar
Salt & Pepper
2 Bay leaves
1 Tablespoon Tomato Paste
1 squirt tomato sauce
1 tsp Worchestshire Sauce
Milk to wash pastry
Fry meat, onions, chilli and garlic until brown, continue browning with diced carrots and parsnips. Add rest of ingredients (except puff pastry) and simmer with lid off for 30 mins (60 with chuck or rump) until suitable pie filling consistency. Split into four individual ramekins and make puff covers ~1cm wider than the ramekins. Brush pastry with milk and bake for 20mins in 200C oven.
