Another reason for fruitcake: you can buy an 800g pack from supermarkets for about the same cost as a single energy gel. Though I carry 3-4 of those too as they give a fantastic boost when your energy levels and morale are low.

The result is a cycle of spikes & crashes, with each successive spike being lower & each crash deeper than the one before. If you relied on glucose for energy replenishment you'd just about need an IV drip to supply it in order to stave off the bonk.
Some sugar is good for a quick pickup, but it needs to be augmented by starches ("long-chain" carbs) that burn longer in order to give a more sustained fuel supply.

For this reason it was on the banned list as a performance-enhancing drug for a while, and in competition although no longer banned there are limits as to how much is acceptable.
